The "Mix Them to Perfection" Philosophy
in the Preparation of Vietnamese Food

Live, Traditional Cham Music at the Forest Restaurant

Vietnamese think in terms of "combinations;" and of course, it is reflected in the way we prepare food. Almost all Vietnamese dishes are a refined process of combining different ingredients (i.e. mixtures of a variety of vegetable, vegetables with herbs and spices, vegetables with seafood, etc.).

Vietnamese stir-fry, fry stew, steam, salad, boil, etc., and always mix meat, fish, vegetables, roots, fruits, beans (to name a few of the possibilities) in our dishes.

"Nem ran" (Vietnamese spring rolls; but you don't have to eat them only during the spring) for example, has a shell made of rice, and a filling of prawn, crab, meat, egg... (i.e. animal products); and papaya, beans sprouts, rice stick, (non-animal products).

Another example of this combination philosophy is the sauce: the saltiness of the fish sauce; spiciness of the chili pepper; sourness of the lime and vinegar; sweetness of the sugar and aromatic scent and flavor of the garlic.

Just try our food and then you will pleasantly understand what we are trying to say.
